Blueberry Jam by Ooi U Jen

A strawberry jam recipe but you can use it for blueberry too.

Strawberry Jam

Ingredients: 

700g Strawberries
400g castor sugar
1/3 cup water

Method:
1. Cut the strawberries into small pieces and place in a saucepan.
2. Add sugar and water to the saucepan and boil over low heat. Stir until the sugar is dissolved.
3. When the sugar has dissolved, turn up the heat to high. Cook until the strawberry mixture is clear and thick. This will take about 15-20mins.
4. Let it cool and store in a clean jar.

Garlic Herbs Butter by Sara Pang

1 Block of butter, 250g
1 pinch of salt

1tsp dried oregano
1 tsp dried parsley
1 tsp dried coriander
4 cloves of chopped garlic

Whip room temperature soften butter with salt until fluffy and pale. Fold in the rest of the ingredients. Chill and done! ðŸ˜ŠðŸ˜Š

Durian Kaya by Jemmy Yeo





My durian kaya .... smooth and firmer texture (old school nyonya style).
Recipe :
14 nos of fresh chicken eggs
250 gm of sugar ( castor sugar, brown sugar or gula melaka - personal preference)
250 ml Kara coconut milk / fresh coconut milk
100 gm DURIAN flesh / pulp (optional)
pandan leaves
add all the ingredients together, whisk until the sugar dissolved. ( do not over whisk)
put in pandan leave.
use double boil method.
stir occasionally.
cook for about 2 hours or desired texture.

Hainanese Nyonya Kaya by Fiona Foo

Here's my recipe-
20 whole eggs
15 pandas leaves

1.2kg sugar
900ml coconut milk

Method:
1. Mix 700g sugar with eggs, stir thoroughly.
2. Add coconut milk. Put aside.
3. Melt 500g sugar till golden brown. (Slow fire)
4. Slowly add golden brown sugar to egg mixture.
5. Add pandan leaves and Double boil for about 1hr under low heat. Must keep stirring to have smooth texture.
6. When mixture becomes slightly thickens, remove from heat and keep stirring till slightly cool down.

This portion makes 5 full Daiso 450ml bottles.

Here the Recipe -

350g pumpkin
200ml coconut milk 
50g sugar
3pandan leaves (tight into a knot for easy removal)

Method
1. Remove the skin of pumpkin, cut into 
chunks

2. Steam the pumpkin in hight heat for 
10mins or till it turns soft

3. Put pumpkin, coconut milk n sugar in 
the food blender n blend until it turns 
to smooth texture 

4. Get ready the cooking pot, pour the
mixture n add pandan leaves into the
pot. Using low heat, constantly stir the
mixture till it turns to thickened custard
This procedures tke abt 2 5mins

5. Pour into container n let it cool down at 
room temperature before keep it in the 
fridge.

- 1 cup coconut cream (kara)
- 1 cup sugar
- 1 cup eggs (lightly beaten)
- 1 bunch of pandan leaves (approx 15 pcs)
1. Wash, dry n tie the pandan leaves into few bundles
2. Dump all ingredients into breadmaker n set JAM function
3. Once done, throw the pandan leaves n put the kaya into blender to blend till smooth.

Homemade Cranberry sauce by Kitty Katherine Koh -

Ingredients -
A packet of fresh cranberries, half cup of water, half cup of orange juice, 1.5 cup of sugar, 1 - 1.5 teaspoon of orange zest and 1 teaspoon of cinnamon (optional). Stir over low heat until mixture has thickened. You may want to blend it to a smoother texture using a blender and heat it over the stove again. Thereafter cool it completely before storing into a container.
