Egg Toufu by Mabel Tan





I stir fry the pea n carrot with garlic 1st then add 1 tbsp oyster sauce, 1 dash pepper and half chicken cube n 1 tsp cornflour (mix in 2 tbsp water - stir well) add another 60ml water. Add in egg last. Stir gently to make sure the flower egg appear then add in egg Toufu last.

Tofu and Mushrooms in oyster sauce by Serene Ng





Here's the recipe :
Ingredients:

100 gms minced pork/chicken/beef
1 300 gm-block tofu, cubed ( I used 2 tubes of tofu instead)
1-can button mushrooms (drained weight 200 gms)*
1 red chilli, deseeded and finely chopped (optional) *I din add*
1 shallot, finely chopped
1 garlic clove, finely chopped
chopped spring onions, to garnish

Marinade:
1 tbsp light soy sauce
0.5 tbsp sugar
0.5 tsp cornstarch

For the gravy:
2 tbsp oyster sauce**
1 tbsp light soy sauce
1 cup water
cornstarch solution to thicken

1. Mix the minced meat with the marinade ingredients.

2. Heat a wok till hot, add 2 tbsp oil. Fry the chopped chilli, shallot, and garlic till fragrant.

3. Add the marinated meat, breaking it up into fine bits with the frying spatula.

4. Add the mushrooms, oyster sauce, and light soy sauce, stir-frying till everything is well mixed. Add the water.

5. When the mixture starts to simmer, do a taste test and adjust if necessary. Add the tofu, and let the gravy come to a boil again.

6. Gently mix the tofu with the mushrooms and meat, taking care not to break the delicate tofu cubes. Thicken the gravy slightly with cornstarch solution.

7. Transfer to a dish and garnish with spring onions. Serve hot with plain rice.

Recipe-Ingredients-
200 g minced pork,5 pcs big prawn diced..or can use small shirmp, 2 box soft tofu cube,1 can button mushroom-half each pcs, 5 garlic-minced, 2 tablespoon spicy bean paste(tou pan jiang),1 teaspoon sugar,1 tablespoon soya sauce,1 tablespoon ketchup, starch water, spring onion.

Method~
fry garlic & spicy broad bean sauce till fragrant, add minced pork, diced prawns & mushroom,add soya sauce,sugar & ketchup..once all fragrant add cube tofu,fry gently then use starch water to thicken.sprinkle spring onion/pepper if desired.serve hot..

Thats all..
So simple

Salted egg tofu by Serene Huang




Salted egg tofu by Serene Huang -
2 tablespoon fish sauce
1 1.5 tablespoon sugar
2 tablespoon lemon juice

If your fish is as big as mine the above is a guide. But if small u may want to cut. Example.2 tablespoons u cut to 1 tablespoon. Hope it helps


Steamed Tofu by Zen Yip




Steamed Tofu with Scallop in Hot Sauce
Ingredients: 1 pack of silken tofu, fresh scallop, crispy chopped garlic, crispy shallots, spring onions.

Seasoning: 1 tbsp of chinese wine, 1 tbsp of sesame oil, 1 tbsp of soy sauce, 1/2 tsp of sugar.

Method: Cut the tofu into slices with thickness. Place them in a tray. Top the tofu with fresh scallop. Add rice wine and sesame oil to bring to a steam for 4 mins. Heat oil, add soy sauce and sugar to pour it over the steamed tofu. Garnished with crispy garlic, shallots and spring onions.

1 box fortune silken Toufu.
1 tbsp soya sauce
1 tbsp Terikayi sauce...
1 tsp sesame oil
1 dash pepper
2 salted egg (used the egg yolk only)
1 stalk coriander leaf.

Method.
Steamed the salted egg. Set aside.
Steamed the cut into cube silken Toufu for 10 minutes with all the seasoning and scattered the salted egg and coriander leaves on top.



Hotplate tofu with prawns by Sharon Foo




Recipe -
Coat yr egg tofu with cornflour n deep fry n leave aside
8prawns , 2garlic, 2tbsp chilli bean paste, 1/2 tbsp oyster sauce, 1tsp soya sauce, 1/1/2tsp sugar, 1/2tsp cornflour mix with water, 4tbsp water, 2egg (beaten)

Heat some oil stir fry yr garlic till fragrant n add in your prawn till half cook. Add in all yr seasoning n give a quick toss then follow by water till boil n add in yr cornflour water. Once thicken off fire.

Heat up yr hot plate till very hot, add some oil n pour in the beaten eggs till cook n add in your egg tofu off the fire n pour in the ready sauce. Done n serve it with your rice

You can add in extra like mushroom , cauliflower ect ingredients that you like. Taste wise can reduce if you are not heavy taste bud one.


Cereal tofu by Shirley Ho




Estimating 1 tube tofu per person, I used 3 tubes of egg tofu.
Batter for shallow frying tofu:
Handful of corn flour
1 egg, beaten and mix with a little ice cold water
Cereal mixture:
A cup of cereal
2 teaspoon of sugar
2 teaspoon of milk powder
1/2 teaspoon salt n some pepper
A handful of curry leaves
A knob of butter
Some slices of chilli padi

1. Coat n Shallow fried tofu till browned n crispy n set aside.
2. Fry butter on medium flame, add in curry leaves n chilli. Fry till fragrant.
3. Add in cereal mixture n continue to stirfry till crispy.
4. Add in tofu gently, coat well with cereal. And it's ready!
For convenience, you can also get cereal mixture from the supermarket



Mapo Tofu 麻婆豆度 by Sara Pang



Mapo Toufu

1 tube toufu (cubed)
Minced chicken (200g)
4 Chinese mushroom
1tbsp Fermented soybean paste
1 tsp Black preserved soybean (chopped)
3 cloves of garlic
2 cup broth
Pepper and sesame oil
1/2 to 1 tsp sugar
1/2 tsp dark soya sauce
Corn starch and water (thickening)

Marinate minced chicken overnight with corn starch and oyster sauce and pepper. Sautéed garlic and black preserved beans till fragrant. Add minced chicken and fry till partial cooked. Add in mushroom and fry for another minute. Add broth and toufu and all seasonings except corn starch. Simmer for 2 mins. Add more broth or water if u like more soup. Thicken up with corn starch.
