Smoothie Steamed Egg by Josephine Toh

Steps -
1. 2 eggs +1 small pack of chicken stock (250ml)
2. beat the egg with the stock then sift it.
3. Use heatproof cling wrap to cover the bowl.
4. In boiling water, put in the egg mixture in to steam.
5. steam for 5 to 6mins.

Steamed Pork with Tung Chai (冬菜)
Ingredients
300g minced pork
2 tbsp Tung Chai, washed 3 times
1 tbsp sesame oil
1 tbsp corn starch
1/2 tsps Feng He Garden Dark Soy sauce plus 1 tsp Feng He Garden Light Soy Sauce
1 tbsp Oyster Sauce or Worcestershire Sauce if you have
1/2 tsp Ginger Sauce (optional)
A Few Dashes of Pepper
300g minced pork

1 tbsp corn starch
1/2 tsps Feng He Garden Dark Soy sauce plus 1 tsp Feng He Garden Light Soy Sauce

Cooking Directions
Mix all ingredients together, stir around until the texture of the meat turn sticky, let it marinate for at least 3 hours.
Steam on high for 20 minutes.
Garnish with fried shallot and spring onion.

Sam Leong's Mushroom Rice with Golden & Silver Steamed Eggs by Helga Soo
Mushroom Rice Recipe
Ingredients
3 bowls of Cooked Jap White Rice
300g Diced Shiitake Mushrooms (soaked)
Some Plain Flour
Oil for deep frying the Mushrooms

Method
Coat the Diced Mushrooms with Plain Flour.
Coat the Diced Mushrooms with Plain Flour.
Heat Oil using medium heat and deep fry the coated Mushrooms till little brownish.
Mix the deep fried Mushrooms with the White Rice well, serve.
Golden & Silver Steamed Eggs Recipe
Ingredients
A) 4 Large Eggs
2 tsps Hon Dashi / 2 tbsps Dashi Sauce
1 tbsp Jap Light Soy Sauce
1 tbsp Sake
2 tbsps Mirin
1/2 tsp of Salt

Method
Whisk Ingredients (A) well then pour into (B). Whisk slowly to mix well but avoid bubbles.

Place ingredients (C) into 5 ramekins carefully pour the Egg & Water mixture into the ramekins, 3/4 full. Cover the ramekins and steam over medium heat for 12 minutes, set aside.
In a pan, melt Butter using medium heat and add mashed Salted Egg Yolks, stir fry till foams are formed. Dash little Sugar and stir, off heat then dish out. Scoop the Salted Egg mixture & put onto the Steamed Egg. Garnish with chopped Spring Onions.

Ingredients:
3 eggs, abt 480 ml stock
1/2 tsp salt, 1 tsp sugar
You may want to add :
Prawn, Japanese fish cake, shiitake mushrooms or chicken, diced
Method
1. Beat egg in a bowl
2. Add salt and sugar into the soup stock
3. Combine the soup stock and egg mixture. Sieve it
4. Place chicken, mushroom, prawn in a bowl. *
5. Sieve egg and stock mixture into the bowls *
6. Cover the bowls with aluminum foil.
7. Steam for 10-13 mins
8. Garnish before serving.
Enjoy as the steam egg custard is really smooth.

10pcs of prawns (de-shelled)

Method:
Crack n beat eggs, add seasoning, light soya sauce n pepper.

Heat some oil in wok n put in prawns to stir fry till 1/2 cooked.
Then add in beaten eggs. Let it fry till top.side of egg looks 1/4 cooked n flip to the other side.
Once both sides is fully fried, served hot.

3eggs
1.5 cups of lukewarm water
1tsp of corn flour(optional)
Whisk eggs n water till well combined. Sift egg solution into steaming bowl. Cover with cling wrap n steam under med-high heat for 15mins until the eggs are set.

In the other pot, heat up abit of sesame oil n add in abit 1tsp of chopped garlic, gv a few stir n add in minced meat, light soya sauce, salt n abit of water till cooked n a dash of pepper.
When the steam egg is ready, slowly spread the minced meat on top n sprinkle some spring onion n serve hot...

Prawn Omelette
Ingredients
5 XL Prawns (remove shells and shits, cut each Prawn into half)
2 Eggs
Some chopped Spring Onions
Some chopped Chinese Parsleys
Dashes of White Pepper
3 tablespoons of Olive Oil
Batter
3 tablespoons of Tapioca Flour
1 tablespoon of Rice a Flour
1 teaspoon of Knorr HaoChi Seasoning
100ml Water
Seasoning
3 tablespoons of Hua Teow Wine
2 tablespoons of Fish Sauce
1/2 tablespoon of Light Soy Sauce
Method
1. Add 1 tablespoon of Seasoning into the Eggs and stir well, set aside.
2. Heat Oil, pour batter into a at least 26cm frying pan. When it turns a little crispy, add half portion of the Eggs around the batter. Let it cook for around 1 min, pour the rest of the Eggs. Move the Eggs and crisp to one corner and add Prawns and the rest of the seasoning. Stir fry till the Prawns are cooked, off flame & dish out. Garnish with Spring Onions, Chinese Parsleys & White Pepper sparingly before serve.

3 tbsp sweet potato flour
15 tbsp water
Fish sauce to taste
Pepper
Corriander leaves

Method:
Mix sweet potato flour with water, add 1-2.tbsp of water and dash of pepper.
In a flat frying pan, heat up 2 tbsp of oil, add in 1/2 the flour mixture and fry till slightly transparent, add in 2 lightly beaten eggs, add some fish sauce and fry for 2-3 mins.

1 roll egg tofu cut into rounds
Mix together all below:

Recipe as below

Seasonings as below -
300ml water or 150ml chicken stock and 150ml water.
1tsp chicken stock powder (omit this if ur using the 50 50 ratio above)
1/2 tsp salt (omit this if ur using the 50 50 ratio above)

2. Sift the mixture 2 to 3 times till you get a smooth mixture. Then pour the mixture into a deep dish through a sieve. Mixed in some chopped spring onions and grounded black pepper if u prefer.
3. This is steamed using my Le Creuset. U can use this method with any heavy base or iron cast pot.
On high heat, steam 1 min, then lower to medium heat steam for 5mins then off fire and let the residue heat steam for 6 mins.
Done! Garnish with spring onions.

I find the attached Oyster Omelette recipe is abit too salty! I shall omit the salt in the batter and add 1 tsp of Knorr Hao Chi Seasoning instead and reduce the Fish sauce to 2 tablespoons instead of 3.
