Thai Milk Tea Ice Cream by Susan Kwek

Thai Tea Ice Cream (No Machine Method) ไอติมชาเย็น
(Recipe adapted from: hot-thai-kitchen


Ingredients -

3.5 cups whipping cream
1/2 cup Thai tea leaves
1/4 tsp salt
1/2 can sweetened condensed milk

Method:-

1. Heat whipping cream in a small pot over medium heat, stirring occasionally, until the cream is steaming.

2. Add tea leaves and salt, and stir just until the cream boils. Remove from heat and steep for 5 minutes (don’t leave it sitting until it cools down or it’ll be really hard to strain!).

3. Strain the cream using a coffee strainer — you should have about 3 cups of cream. Once the cream is cool enough to go into the fridge, refrigerate for at least 4 hours or until completely cold; I like to do this step 1 day in advance.

4. Once the cream is chilled completely, whip the cream to soft-peak stage using a stand mixer with a whisk attachment or a hand mixer.

5. Add condensed milk and continue whipping until stiff peaks (when you lift your whisk, the peak that forms maintains its shape).

6. Transfer the ice cream into container and freeze for 2-3 hours or until solid.

Matcha ice cream by Eileen Ang




This was taken fm Min's blog.
Recipe as follows:-

2 tbsp matcha powder
2/3 cup caster sugar
3 egg yolks
3/4 cup milk
3/4 cup heavy cream

1. In a small bowl, mix the matcha powder w 2tbsp of caster sugar.
2. In a separate bowl, mix together the egg yolks & remaining sugar.
3. Pour the milk into a small pot & gently heat, taking care not to let it boil. Remove fm heat & mix a few spoonfuls of warm milk to the matcha powder & sugar in the small bowl. Once u have a smooth paste, add it to the remaining milk in the pot, then gradually combine w the egg yolk mixture.
4. Return the pot to the stove & heat slowly low heat ( again not to let the mixture boil), u til the mixture coats the back of the spoon. Remove fm heat, strain thru a fine sieve and cool completely.
5. Lightly whip the cream and then add it to the cooled matcha mixture.
6. Transfer the mixture to a large container. Chill in the fridge for 1 or 2 hrs then put it in to the freezer. When ice crystal starts to form, use a wooden spoon & stir very vigorously to break up the ice crystal.then return to freezer.
I done it twice and left it over night in the freezer.





Deep fried ice cream by Sharon Foo





Scoop yr ice cream into yr preferences size of ball shape. After that put in back into the freezer for an hour.
Pound cornflakes till its fine.
After an hr roll yr ice cream with the cornflakes. Then dip in egg wash then another roll of cornflakes.
Put in back into the freezer for another hour or even longer.
Deep fry in fast action. About 3 sec the whole ice cream ball will turn golden.
It's very easy. Do give it a try.

Super easy corn ice cream

200ml whipping cream
1/2 cup cream of corn
3tbsp powder sugar...

Whip whipping cream and powder sugar till stiff peak, add corn and freeze min 1hr.
