Ingredients:
One whole chicken
12 pieces of garlic (peeled but left whole)
3 slices of ginger
2 chilli padi ( remove the seeds & half it)
One bunch of basil leaves (Thai)
One bunch of spring onions

Sauce
1/3 cup soya sauce
1/3 cup Hua Tiao wine
1/3 sesame oil
1 tablespoon of dark soya sauce (for the darker look)
One tablespoon of sugar
Method:
1. Wash the chicken and rub a tablespoon of bicarbonate soda on to the chicken , wash thoroughly after 10 minutes
2. In a hot pan, add the sesame oil, heat up
3. Add ginger, garlic & chilli padi, fry till the garlic and ginger are a little brown
4. Add chicken pieces, fry till the chicken pieces are white
5. Add soya sauce and Hua Tiao wine
6. Continue to fry, then add the basil leaves & spring onions
7. Add sugar & dark soya sauce
8. Keep frying until there is very little sauce left. Have to keep stirring it so that it doesn't get burnt.
