Braised chicken with chestnuts, ginko nuts & mushrooms by JJ Lily Ooh

Braised chicken with chestnuts,ginko nuts and mushrooms.
Ingredients:
20 chestnuts,
20 dried dark shiitake mushroom
1 pkt of ginko nuts.
1 medium chicken, cut into piece
Slices of gingers
Shallots and cloves garlic, chopped
2 stalks of scallions, sectioned


Marinate for chicken:
1 tbs soy sauce
1 tbs cooking wine
2 teaspoon corn starch
1 tbs dark soya sauce
Marinate for mushroom
1 tbs sugar
1/2 tbs each of light and dark soya sauce


Sauce:
Chicken stock or water
Dark soy sauce
Light soy sauce
Oyster sauce
Sugar
Chinese cooking wine
Sesame oil
Salt & pepper


Method :
1.Use 1 cup of water to soak dried mushroom for 1 hour or overnight, remove stems.
2.Marinate chicken with soy sauce, wine and corn starch for 20 minutes or overnight.
3.Heat oil in a wok, stir fry ginger, shallots, garlics for 2 minutes.
4.Stir in chicken, cook for 3-5 mins.
5.Add chestnuts, dried mushrooms and ginko nut, oyster sauce (2 tbs), sugar (1 tbs), dark soy sauce (1 1/2 tbs), light soya sauce (1 1/2 tbs) chicken stock and wine (1 tbs).
7.Bring it to boil, then turn to low heat, cover and simmers for 20 minutes or until chestnuts are tender.
8. Add in salt and pepper to taste.
