Seaweed Sesame Floss Cookies by Helga Soo
Crispy Seaweed Floss Cookies (Recipe adapted from Koay Saw Ling, Gourmet Magazine)
Ingredients
300g Plain or Cake Flour
50g Icing Sugar
1/2 teaspoon of Salt
100g Unsalted Butter, diced
30g Seaweed Sesame Floss
90g Milk
Method
Sieve Flour and Sugar, add salt to combine. Rub Unsalted Butter into the Flour mixture with your fingers into a breadcrumb consistency. Add Seaweed Sesame Floss. Pour in Milk and mix slightly and hand-knead into a dough.
Divide dough into 6 portions of 95g. Roll each into a 30cm long dough and place on a baking tray. Refrigerate for 2hrs. Knife the rolls into 1.5cm cylinders. Place neatly on a tray.
Preheat oven at 160 deg cel and bake for 25mins. Leave them to sit in the remaining heat for an additional 25 mins. Enjoy!
