Here's the recipe..
1kg chicken / mid-wings/drumlet
5 shallots - finely chopped
5 cloves garlic - finely chopped
2inches ginger - finely chopped
5 tsp light soya sauce
1 tbsp dark soya sauce
3 dashes white pepper
Half tsp sesame oil
Sugar n salt to taste

Sugar n salt to taste
1. In a big bowl add in chicken n all the season
ingredients.
2. Stir to coat the chicken. Cover with cling film or
Zip lock bag n place in the fridge to marinate for
2hrs . Give the chicken an occasional stir while
Marinating. (U can leave it overnight)
3. Place the chicken on the kitchen top for 30mins to
bring them back to room temp
4. Spray roasting tray or casserole dish with cooking
Oil spray n arrange the chicken on the tray
5. Spray with alittle oil then grill the chicken at 180°c
for 20mins. At the end of this time flip them over
paste the chicken with the remaining marinade n
spray with alittle more oil then grill for an
Additional 10mins
6. Serve the chicken hot or cold...with rice or as snack.
