Eggless tiramisu by Kelly Ko


Low alcohol eggless tiramisu by Kelly Ko

Ingredients (A)
680ml heavy or whipping cream
300g mascarpone cheese
6tbsp caster or fine sugar
1tbsp coffee paste or emulco
1 1/2 bottles vodka mudshake cappuccino (4% alcohol) or
400ml strong coffee, any of your favorite ( if prefer non alcohol)
36pcs sponge fingers
6 tsp cocoa powder
50g chocolate shavings for garnish.
Makes 2 six inch tiramisu cake with 3 layers of sponge fingers
Put ingredients A in a large bowl n whisk until evenly combined with consistency of whipped cream.
Pour coffee liquor into a shallow plate. Dip sponge fingers one at a time into coffee n lay onto your serving dish ( or square ring mould or rectangular tupperware)
Do not over soak the sponge fingers. After one layer of sponge fingers is done, spread with one layer of the cream, and sprinkle 1tsp cocoa powder on top. Repeat for 2 more layers. If there's excess cream, pipe them with a star nozzle on top of the cake before garnishing with chocolate shavings.
To make tiramisu for kids, replace coffee with chocolate milk.
Btw the coffee-cheese cream is so delicious I'm going to use them in my sponge cake in future.
