Claypot Rice using Cast Iron Pot by Helga Soo
Ingredients A
3 cups of Rice
1 pkt of Prima Chicken Rice Paste with Water = 600ml
1 tablespoon of Oyster Sauce
3 pieces of Sliced Ginger
3 cups of Rice

1 tablespoon of Oyster Sauce
3 pieces of Sliced Ginger
Ingredients B
300g of Chicken Fillets **
8 Dried Mushrooms (soaked)**
(Marinade ** with 2 tablespoons of Light Soy Sauce, 1 tablespoon of Oyster Sauce, 2 tablespoons of Mirin and dashes of Black Pepper for 1hr)
2 Chinese Sausages (sliced)
300g of Chicken Fillets **
8 Dried Mushrooms (soaked)**
(Marinade ** with 2 tablespoons of Light Soy Sauce, 1 tablespoon of Oyster Sauce, 2 tablespoons of Mirin and dashes of Black Pepper for 1hr)
2 Chinese Sausages (sliced)
Ingredients C
3 tablespoons of Dark Soy Sauce
2 tablespoons of Sesame Oil
Some Boiled Chye Sims
Half piece of Wet Salted Fish (air fried for 8 mins at 200 deg Cel)
Some chopped Spring Onions
Some Deep Fried Small Red Onions
Some Chinese Parsley (optional)
3 tablespoons of Dark Soy Sauce
2 tablespoons of Sesame Oil
Some Boiled Chye Sims
Half piece of Wet Salted Fish (air fried for 8 mins at 200 deg Cel)
Some chopped Spring Onions
Some Deep Fried Small Red Onions
Some Chinese Parsley (optional)
Method
Mix Ingredients A well and cook for 20 mins on Cast Iron Oven on medium fire. When the rice is almost cooked, add Ingredients B on top of the Rice and cover lid to cook for another 20 mins. Once all Ingredients are cooked, off fire. Let the pot of Rice rest for 10 mins, open lid and add Ingredients C, stir and serve.
