Banana cake by Evelyn Lim




🍌~ Best Banana Cake recipes ~🍌
125 g unsalted Butter
100 g raw brown sugar (u may add another 50g if you are sweet tooth)
1 tsp vanilla extract
🍌(A) in a bowl, melt the above in oven or over stove, remove from heat and add
4-5 medium just ripe mashed banana 🍌🍌🍌🍌🍌(I don like over ripe) put aside and lets it cool to room temp
190g top fine flour/all purpose flour/cake flour – I use top fine flour
2 tsp baking powder
¼ tsp baking soda
🍌(B) in a mixing bowl add all the above mixed well
1 large eggs (estd 63g after deshelled)
60 ml fresh milk
*one tbsp. cinnamon (optional) – I like cinnamon smell so I will add in the flour
*slice 2 medium banana for toping
🛎 Method 🛎
1) Preheat oven 170C, line the baking pan with baking paper
*I using Redman non-stick baking pan (size Length 8.5”x width 4.5” x height 3”)
2) add egg into (A) bowl follow by (B) mixer in batches and milk, mixed well combined .
3) pour in the baking pan, tap the baking tin on counter top few times, top with banana slices
4) bake in the preheated oven 170 for 40 min (use lower rack), once done, remove from oven to the cooling rack lets it cool.
5) slice and serve.
