Overnight slow cooked Beef Stew -
Ingredients:
1kg Beef shin, cubed
3 tomatoes, chopped
3 large yellow onions, chopped
1 tsp Italian herbs
1 bay leaf
1/2 tsp salt
1/2 coarse black pepper
1L homemade chicken stock (enough to just cover the beef)
1 tbsp corn starch
Put onions, tomatoes, beef, stock, seasoning, chicken stock and herbs into the slow cooker. Switch to auto-shift mode. Slow cook for at least 5 hours or overnight (I did mine for 8hrs). Add water into corn starch, and put table spoon by tablespoon of starch mixture into the slow cooker to the right consistency. Serve hot.
