Banana cake recipe -
(makes 2 loaves)
(A)
2 eggs
100g milk
150g sugar
pinch of salt

120g corn oil (i used 105g rice bran oil)
2/3tsp vanilla

190g plain flour
2/3tsp baking powder (i used 3g)
2/3tsp baking soda (i used 3g)
1tsp ground cinnamon (i used 5g)

(D)
2 bananas, mashed
(i just roughly chopped 3 del monte banana)
Whip (A) until frothy.
Add (B) and beat till well blended.
Sift in (C) and mix well
Add (D) and give it a stir
Pour batter into 2 loaf tins lined w baking paper
Bake at 170deg C for 30-40mins or till skewer test comes out clean.
(mine is usually done at 30mins, so I keep checking from 25mins onwards)
