Ingredients :
1 big chicken ($14.00),
1 pkt each of shimeji mushroom (Brown and White),
1/2 red and yellow pepper,
parsley,
ginger,
garlic and dry chilli.
Sauces : 4 tbs oyster sauce, 3 tbs light soya sauce, 2 tbs dark soya sauce, 4 tbs chinese wine and 1 bowl of stock or water.

Remark : I had season Chicken with 1 tbs of brown sugar, 2 tbs light soya and 1 tbs of chinese wine for overnight.

Methods : Heat wok with 2 tbs of sesame oil and 1 tbs of cooking oil, add in ginger & stir fry till fragrant, add chicken and stir fry for abt 2-3 mins, add in dry chilli, garlic and stir fry for 5 mins, add sauces (except chinese wine) and stock, cover and slimmer for 10-15 mins, add in mushroom and slimmer for abt 10-15 mins (till chicken cooked), add in pepper, chinese wine and cover for 1-2 mins, turn off heat and serve with steam rice.
