Spiced mixed fruit chocolate yogurt loaf by Fc Ng

Spiced Fruits , Chocolate & Yogurt Loaf

Ingredients:
200g Natural yeast starter(fed & leave in room temp 4-6hrs)
230g Bread flour ( I used Japanese flour)
20g Low protein flour
5g Cocoa powder
5g Extra dark cocoa powder
20g Light brown sugar
120ml+- Plain yogurt drink
1/4tsp Salt
35g Butter
100g Dried mixed fruit (I used cranberries/raisins/figs)
Spices (cinnamon/nutmeg/clove)

Method:
1. Prepare yr Natural yeast starter, feed & leave in room temp for 4-6hrs.
2. Sprinkle spices on dried fruits generously if u prefer strong taste, mix well and leave aside.
3. When the natural yeast is active & ready, mix all ingredients except butter & dried fruits to form a dough, add in butter & continue kneading till you achieve window pane stage.
4. Shape it rnd and put into oiled bowl, spray water on dough surface, cover & let it proof for 60-90mins or double in size.
5. Remove dough, punch out gas, shape it round and rest the dough for 15mins.
6. Final shape into loaf, put into loaf pan, spray water on surface then put into oven with a glass of hot water to proof for 60-90min or double in size.
7. Spray water on dough surface again bf put it into preheated oven 210ºC to bake for about 35-40min.
8. Remove fr pan to cool the loaf completely on cooling rack.
9. Slice & enjoy with yr favourite butter (^-^).

Ps: proofing time is just a guide, hw long to proof is depending on hw active is the yeast starter & surrounding temp.
For braided loaf, split the dough into 4, roll it out long, seal 4 strands together at the end,braid it, seal the other end then put into loaf pan for final proof.
