Char Siew by Evelyn Wang




Juicy Barbecued Pork (Char Siew)

Ingredients:-
700gm of Pork Butt (Mine shown in pic is 470gm)
4TBSP of Char Siew Sauce of your choice
1TBSP of Honey
Seasoning:-
1TBSP of Shaoxing Wine
2TSP of freshly grated ginger juice (I didn't add in)
1TBSP of Light Soy Sauce

Method:-
Rinse and cut the pork into strips about 2 to 2 1/2 inch in width.
Marinate the pork with char siew sauce and seasonings.
Cover and chill in fridge.
For a better result, marinate for at least 6 hours, or overnight.
Preheat AF at 180•C. Remove the pork from the fridge and rest in room temperature for 10minutes. Transfer into a ceramic tray or non stick pan (oven-proof) with all the marinade, cover with foil. Bake for about 50mins (mine done at 30mins cos of the size)
Remove the foil, lower the heat to 140•C. From now on, key an eye to the meat.
Spoon the sauce over the pork every 10minutes to keep moist. Turn to the other side and continue baking.
Keep basting sauce over the pork to keep moist.
When the sauce becomes less and thicken, brush the pork with honey and bake for 10minutes.
The pork will gradually turn red in color.
When you are satisfied with the color and the consistency of the gravy, it is done.
Remove from the AF and let the pork rest for 10minutes. When it cools down a bit, slice and serve with gravy.
Note:-
Do not brush any honey too early or the pork will get burnt easily.. Just apply when the pork is almost done..
