Pig stomach with other seafood by Lily Chew

Ingredients
1) fresh scallops - 10 pcs
2) 1 pig stomach
3) 1 sea cucumber
4) dried mushrooms - 8 pcs
5) 1 onion
6) ginger
7) garlic
8) Chinese wine
9) oyster sauce
10) light soya sauce
11) Cooking oil & sesame oil
12) pepper
13) spring onion & coriander leaves

Cooking:-
1) After the pig stomach is thoroughly cleaned, put into boiling water to cook till soft. (I reckon hv to let it boil for at least 2 hrs). After it is cooked & soften, cut it into slices.

2) Heat the wok, add in oil, stir fry the ginger, onion & garlic until fragrance.

3) Add in dried mushroom(sliced) & pig stomach, sea cucumber & stir fry.

4) Add in 2~3 tbsp of oyster sauce & stir

5) Add in scallops & stir, add in 150 ~ 200ml of hot water...

6) Add in 2 tbsp of light soya sauce, 2 capful of chinese wine, 1 tbsp of sesame oil & dash of pepper.

7) Add in corn starch, stir & put it to boil... Add in the spring onion & coriander leaves. And it's ready to be served or con't to simmer it in low fire for another 15m.

The dish is even tastier if u add some marinated sliced pork & prawns to it. U can add in the canned button mushrooms too. With these, the seasoning will hv to be adjusted accordingly.

This dish is like lor bak, it becomes very tasty (入味) when leave it overnight.
