Wasabi Chicken with Mango Salsa by Zen Yip




Ingredients: 1 deboned and skinless Chicken Drumstick (Cut into chunks)

Marinate chicken for at least 1 hour with 1/2 tsp salt, 1/4 tsp sugar, 1/2 pc egg white, 1/4 tsp sesame oil, corn flour (for dipping to deep fry)

Wasabi Sauce: 2 tbsp mayonnaise, 2 tsp condensed milk, 1 tsp of wasabi paste, 1 tsp lemon juice
Mango Salsa: 1/4 mango (diced), 1/2 tbsp Thai Chilli Sauce, dash of mint leaves

Method: Heat oil to deep-fried chicken. Set aside. Mixed wasabi sauce and tossed with the cooked chicken. Garnished with Mango Salsa.
