Teriyaki Salmon

Ingredients -
2 salmon fillets with skin
Salt & pepper...
1 Tbsp flour
½ Tbsp olive oil
1 Tbsp butter
1 Tbsp sake (or dry sherry)
Seasonings
1 Tbsp sake (or dry sherry)
1 Tbsp mirin (or 1 Tbsp. sake + 1 tsp. sugar)
1 Tbsp sugar
1 Tbsp light soya sauce

Steps -

1. Wash the salmon fillets and pat dry. Season with salt and pepper.
2. Combine the seasonings and mix well till sugar dissolved.
3. Sprinkle 1/2 tbsp flour on each of the salmon. Then continue next side and remove excess flour.
4. In the frying pan, add the olive oil and melt the butter over med heat. Add the salmon in with skin down n cook for 3 mins or until it is nicely browned. Do both sides.
5. Add sake in n cover with lid. Steam the salmon for 3 mins or until cooked. Remove n set on plate.
6. Add the seasonings to the pan n heat up. Once it starts to boil, add the salmon back n spoon the sauce on the salmon.
7. Once sauce starts to thicken, off flames, remove and serve.
