Steamed white Pomfrets with salted mustard and toufoo
Ingredients
2 fresh pomfrets ( washed and rub with a little salt and pepper )
1 sliced tomato
Chinese salted mustard
Fresh soft silken toufoo
ginger slices
shredded red chili
Handful of fresh coriander
Crispy pork lard
2 pieces wet sour plum

Place ginger slices , sour plums and crispy pork lard in a deep plate followed by the fish. Place toufoo , tomatoes ,salted mustard , coriander and more ginger onto fish. Drizzle some heated sesame oil onto fish.
Water must be boiling before placing fish in to steam in a steamer. Steam fish on high heat for 10 mins , do not over steamed fish. Serve hot immediately
