Taiwanese Braised Pork by Elektra Chan




Taiwanese Braised Pork by Elektra Chan Guo Baobei

Recipe as below.
1. Sautée 3 cloves minced rose garlic and 5 mini minced shallots till fragrant. Add 300g minced pork 🐷and stir fry at medium heat 🔥 until the meat turn brown. Deep fried around 3 cloves of sliced garlic and set aside first. (At least 1 tbsp)
2. Next add the 1 tbsp crispy garlic, mix well and add 1tbsp sake or Chinese rice wine and let it boil at medium heat till alcohol evaporate.
3. Next add in all the seasonings which are mixed well first, bring to a boil then add in the enoki mushrooms or shitake mushrooms and simmer at low heat for 10 mins with lid covered on. Then turn off the heat and let it rest for 10 mins.
For this part, u must make sure the seasonings sauces cover totally all the meat. So don use too big de pot.
4. Open the lid, threw in some bannou negi(spring onions) and bring to a boil at medium heat and let the sauce reduce to ard 1/3 left for it to reach a more concentrated flavour! 😍
** seasonings ingredients are
3 tbsps light soyu
300ml coke
1 tbsps dark soyu
1/2 tbsp peanut butter
1 stick cinnamon
1 star anise
