500g mutton, cut into cube
1 box coconut milk
3tbsp oil
Ground ingredient
3/4 bowl shallots
4 cloves garlic
thumbsize galangal
10 fresh red chilies

2 tbsp meat curry powder mix with some water –paste like

2 piece cinnamon stick
2 star anise
6 cloves
4 cardamom, use seeds only
2 sprigs curry leaves
2 stalks lemon grass, bruised
Seasoning
1 tsp salt
1 tbsp sugar
1 tbsp lime juice
Method
Heat oil in a and fry ground ingredient until fragrant. Add in curry paste and other ingredient and continue to fry for 3–4 minutes until oil rises.
Put in mutton and water, agak agak 1/2 -3/4 cup first.
Bring to a boil. Reduce heat and simmer for 40–50 minutes. Add more water if not enough (don’t forget you have not add in coconut milk,, this will thicken the curry later)
Pour in coconut milk and continue to cook until meat is tender.
Season to taste.
