Deep fried / Pong Pong prawn fritters by Evelyn Lim

I use 1kg tiger prawn about 3 inched long...
prawn need to de shell n devein. ..cut the vein at the bottom part of the prawn at interval to prevent curl up when deep frying.
season A) 1/2 tsp salt 1/8 tsp pepper 1/2 tsp sesame oil
marinated prawn with the above for 30 min.

batter mixed:
240g self raising flour
60g corn flour
250ml ice water
2tbsp oil
1tsp chicken stock power
2/4 pepper

additional cornflour in a bowl for coating.

method
heat up oil, coat prawn with corn flour n shake off excess flour . dip into batter to coat evenly b4 putting into the wok
deep fried till golden brown
bon appetite

note : 🍤🍤🍤if u use 500g prawn please half the batter n seasoning.
