Ingredients :
500 g of pork collar ( U can use pork belly but do cut off the hard skin )
1/2 cup of XO ( 150ml )
1/2 cup of plain water
Ingredients for marinating the pork :
1 onion (half the hand size )
6-8 garlics
1 tablespoon of LKK oyster sauce
1 1/2 tablespoon of Maltose or honey if u don't have it (麦牙糖)
1 teaspoon of fish sauce ( u can use salt instead but fish sauce can bring out the taste of the pork better )
(U can add1 spoon of sugar or more if u want it to be sweeter )
1 tablespoon of corn flour
some pepper to taste
1 spoon of sesame oil ( so that the meat will not be so dry and it gives aroma for the meat )
1 spoon of black sauce if u want the color to be nicer ( optional )
2 stalk of spring onion ( use only the white portion for the marinating of the pork ) The green portion for deco .
P/S : Blend all the above ingredients together .U can use blender, but I use hand, so I can use the little left over pieces of onion to make it taste better .
Method :
1) Put the XO and water in a container, add in the pork, use a knife or a fork to poke the meat about 10-15 times, so that it will release the blood out plus the meat will absorb the XO thru the holes .
2) Let it sit for 1 hr ( keep the meat in the fridge )
3) Throw the XO water away, rinse the pork a bit, do not wash too long as the taste will go off .
4) Add in the marinate ingredients and mix well, keep it for at least 4 hrs in the fridge , or u can made this 1 night in advance .
5) U can use AF, or wok or oven to cook .
6) Using AF, u need to add a little olive oil or oil inside to prevent the pork from sticking, my advice is put a foil inside so u need not to wash the AF till so jiak lusk tongue emoticon
7) Turn the temperature to 160 for 1st 10 mins, turn to the other side, another 10 mins ( U can check ur meat ...add more time 2-3 mins if the color still uncooked, do check on the meat incase it get burn ) Than turn to 180 C for 5 mins or more, depends on the color of ur pork . To make sure the pork is fully cook, use a fork to poke, if it go thru, it's cook )
8) Slice the charsiew and serve with some of the gravy, sprinkle some sesame seeds and spring onion on top to serve .
P/S : U can cook the gravy with another pan, stir fry till it change color and a bit dry .( the left over sauce that u marinate the pork)
