Bake BBQ Pork (My Version)
Ingredients
550g pork shoulder (cut into long strips)
Sauce
1/2 tsp white pepper powder
3/4 tbsp dark soya sauce
1 tbsp Hoisin sauce
1.5 tbsp oyster sauce
1.5 tbsp salted soya bean paste
2 tbsp light soya sauce
3.5 tbsp Hua Tiao Chiew
5 - 7 tbsp caster sugar
100ml water

Method
1. Mix well all the sauce in a glass wear, marinate the pork shoulder strips evenly then cover for 3 hours or overnight in the fridge.
2. Preheat the oven to 180C.
3. Cover the tray with aluminum foil (easy to wash), put the wire rack on top of the tray and brush with some oil.
4. Arrange the pork shoulder on the wire rack and brush some marinating sauce on it before baking, set excessive sauce aside.
5. Bake the pork shoulder at 180C for 15 minutes , reduce the heat to 170C for 10minutes and turn the meat over halfway through. Continue to bake at 170C for 10 minutes brush sauce on the meat.
6. Lastly increase to 180C to 200C (if you want your meat to be a little burnt), brush sauce on the meat for 15 - 20mins or till cooked.
7. The remaining sauce, boil it for dipping.
8. Cut cooked pork into slices, to your bite size, and serve with steam rice or noodles.
