东坡肉 Braised pork belly Dong Bo style


Ingredients :
1 kg of pork belly
8-10 garlic
2 & 1/2 tablespoons of premium black bean soy sauce paste (酱油膏 )
If u can't get this 酱油膏, u can use black soy sauce instead, but do add in some rock sugar to cover the taste
1 cup of water ( can add a bit more to almost cover the pot )
2-3 stalks of spring onion
3 Tablespoons of Chinese wine
Method :
1) Boil a pot of water, put in the pork belly when the water is boil, boil for 5 mins and put them in cold water soak for 10 mins
2) Heat up the clay pot, add oil, put in the garlic, fry till it turn a bit golden brown. Add the soy sauce in, add 1 cup of water, bring it to boil.
3) Put the spring onion at the bottom of anther clay pot, put in the pork belly, arrange it nicely .
4) Add in the gravy made earlier, on big fire, bring it to boil,than lower it to ver small fire. Boil for 40- 50 mins, off the fire.
5) After let it sit for 20-30 mins, on big fire, till it boil,lower to low fire. Boil for 5 mins, off it . Repeat this twice, and can serve . Serve it hot .
