Salted egg yolk chicken by Sharon Foo

Marinate 500gm pork/ chicken with 3tbsp soya sauce, 1tbspsesame oil, 1/2 tsp pepper, 1tsphua diao jiu , 1 egg. For many hours or overnight. 

Be generous with your coating with self raising flour / rice flour. Deep fry n set aside. Melt 2tbsp butter with low fire fry with chilli padi n curry leaves till fragrant. Then add in 5 ready smash cooked salted egg yolk. Give a quick stir continuously till bubbles appear n pour in 1/2 can evaporated milk into it. Add in the meat n sprinkle 1/1/2 tbsp sugar n give a quick mix n dish up.
