Pumpkin Water Chestnut Dessert by Claudine Ang

Ingredients:
1) 450g pumpkin ( without skin)
2) 6 water chestnut, peeled and finely chopped
3) 60g sago
4) 60ml coconut milk
5) 5 pieces of pandan leaves; knotted and bruised
6) 3/4 cup water
7) some hot water
8) sugar to taste

Directions:
1) Steam the pumpkin and puréed.
2) Cook sago in boiling water till it turn transparent. Drained and soaked in cold water.
3) In a pot, add in the 3/4 cup water, with pandan leaves. Once boil, Add in the pumpkin, water chestnut and coconut milk. Add in hot water till it gets to the consistency you like. Continuous stirring.
4) Add in sugar. Once boil, add in the sago ( drain off the cold water).
5) Heat off when boil.
This dessert can be served either hot or cold.
