Stewed Chicken with Chu Hou Sauce by Zen Yip

Ingredients: 2 pieces chicken drumsticks (deboned, de-skined and cut into chunks), 4 cloves of garlic (roughly chopped), 1 onion (sliced), 50ml water
Marinade: Marinate chicken with 1 tbsp soy sauce, dash of salt and pepper, 2 drops dark soy sauce for at least 1 hour.
Method: Heat some oil, sauteed onion and garlic. Add Chu Hou Paste, followed by water. Bring the chicken to a stew for 15 mins. Add a dash of salt and sugar to taste, garnished with spring onions.
