Peking Spare Ribs
Ingredients: 250g Spare Ribs, 3 cloves of garlic (sliced), chilli padies (optional)
Marinate: 1 egg, 1 tsp Worcestershire Sauce, 1/2 tsp garlic powder, 1/2 tsp chicken powder, 1 tbsp soy sauce, 1 tbsp shao xin wine, 1/2 tsp sugar, dash of salt and white pepper, 1/2 tsp sesame oil, 1 tbsp cornflour
Sauce: 1 tbsp soy sauce, 3 tbsp ketchup, 1 tbsp chilli sauce, 1 tbsp sugar and 50ml water/stock.
Method: Marinate the spare ribs for at least 1 hour. Heat oil to deep fry spare ribs till 90% cooked. Set aside. Heat oil and sauteed garlic till golden brown. Combined seasoning and bring back the spare ribs to toss with the sauce and simmer till the spare ribs are fully cooked. Topped it with chilli padies. Served.
