Mexican Coffee Bun

(Yield about 16 -17 mini buns)

Note : Sequence of Preparation – Coffee topping > Bread
dough > Butter sugar filling

Coffee Topping Ingredients
200g plain flour
200g butter, softened in room temperature
140g icing sugar
3 eggs (lightly beated)
3tbsp instant coffee powder and dissolved in 1 tbsp hot water

Method
1. Using electric mixer to beat the icing sugar & butter
till light and fluffy.
2. Add in eggs one by one. Continue to beat.
3. Add in Sifted flour and mix until combined. Scoop the cream
into a piping bag and chill it.

Butter & Sugar filling (prepare at last)
16pcs cold (hard) butter, cut it into cube / rectangular and
coat with coarse sugar (see photo)

Sweet Bun Dough Ingredients
500g Bread flour
40g milk powder
60g fine Sugar
1tsp salt
11g instant yeast (1 pack is usually 11g)
60g unsalted butter (softened)
1 lightly beaten egg
270 g water
*** I am using Breadmaker (BM) to knead the dough.

Method
1. Follow the sequence for BM to add in ingredients : Water
> Egg > Sugar > salt > Milk Powder > sifted flour > make a
well and add yeast. Start the kneading cycle which is about 20 minutes.
2. Once the dough is form after approx 5 minutes kneading, add
in softened butter and continue kneading until cycle completed.
3. Once the dough is done, remove from BM and divide into 55g
each and rest for 10 minutes.
4. Flatten the dough and wrap in the butter sugar filling,
make sure you pinch to seal the dough properly. Shape into ball.
5. Place the dough on baking tray with non stick baking
lining. Proof the buns for 45 – 60 minutes.
6. Preheat oven @ 200 degree C.
10. Pipe the coffee cream in a spiral form onto the buns. I
preferred to start from the outer circle then slowly move into the center.
11. Bake for 12-15 minutes or until the buns are lightly brown
and crispy (as you have seen in those bakery).
12. Put it on cooling rack and best to consume on same day or
while it is warm.
If you are to consume on next day, please toast / bake /
Airfry it for 2-3 minutes until the topping gets crispy again. Otherwise it
won’t be nice.
