Chicken Apple soup by Pearlyn Ng



4 chicken drumsticks
Handful of red dates
8 pieces of small dried scallops
2 Firm red apples ( medium size )
1.5 litres water

Wash and blanch chicken drumstick in boiling water to remove smell and scum
Add drumsticks , apples , red dates and dried scallops and water to pot. Bring to boil then lower heat and continue to boil for another 25 mins.
Season with salt if needed ( I don't add any salt to my soup as it is already so sweet and tasty )
Serve hot with rice or drink on its own
