Black Cod by Elektra Chan Guo Baobei




Golden Garlic Black Cod with homemade sauce by Elektra Chan Guo Baobei -

1 large Black Cod Fillet Or Steak
1 Tablespoon Minced Garlic
1 Teaspoon Potato flour

Sauce -
1 Tablespoon Good Grade Light Soyu
Half Cup Chicken Stock
1 Teaspoon Fine Sugar (I use jap brown sugar)
A Dash of White Pepper

Method -
1. Put the minced garlic in a microwavable bowl. Pour oil just enough to cover the garlic. Into the microwave on medium heat for 5 mins. Please judge urself. Once the garlic turn brown, remove from the microwave as the hot oil will still continue cooking the garlic for a while. Don let it burn. Set aside
2. Coat the black cod skin and flesh with the potato flour.
3. Add a cup of oil to a pot or wok. Heat the oil and deep fry the black cod until golden.
4. On a plate, place the cooked black cod. Leaving ard only 1 tablespoon of oil in the pot, add in all the sauce ingredients and heat till it boils. Pour the sauce over the black cod and topped with the crispy garlic. Done. Topped with chopped spring onions.
