Nonya Braised Pork & Drumlets by Helga Soo

Ingredients
600g Pork Belly
5 Small Drumlets
6 Dried Mushrooms (soaked)
1 Carrots (cut)
3 Potatoes (cut)
5 Hard Boiled Eggs
3 stalks of Green Onions (cut)
2 Big Red Onions (sliced)
1 piece of Ginger
1 Tablespoon Minced Garlics
3 Tablespoons of Bean Paste
Some Corianders

Sauce
2.5 Tablespoons of Oyster Sauce
1 tsp Five Spice Powder
1 Tablespoon of Dark Caramel Soy Sauce
1 Tablespoon of Wanjiaxiang Sauce
2 Tablespoons of Gula Melaka
2 Tablespoons of Hua Teow Wine
1.5 liter of Water

Method
Heat oil, add Red Onions and Ginger and fry till fragrant, add minced garlics & Bean Paste and stir fry for about 2 minutes. Add Pork belly and Drumlets, stir fry till 50% cooked, pour Sauce, add Mushrooms, Carrots and Potatoes and stir fry for awhile then cover and let it braise for 1hr.
Open cover and stir, add eggs and spring onions and cover, simmer for 1hr or more. Sprinkle Coriander before serve.
