Organic Baby Asparagus Prawn Rolls!

Ingredients -
200g Fresh Tiger Prawns
200g Organic baby asparagus

Seasonings -
1/2 tsp salt (I use fleur del sel)
A pinch of grounded black pepper
1/2 tbsp potato starch
1/2 egg whites
Grated Parmesan cheese how much according to u.
1 tsp mirin
A pinch of togarashi
One stalk of negi chopped
(Spring onion)
1 tbsp of crispy bacon bits

Method -
1- De shell and devein the tiger prawns, rinse well with sake or any wine or water then pat them dry.
2. Use the back of the knife to chop the tiger prawns lightly to mash it up to paste. But I try not to so that I can still have the slight crunchy feelings when we bite down on it.wink emoticon
4. In a bowl, mix together the prawns and the seasonings till it reached a thick consistency. Next pick up it up and slam it back to the bowl for 10 to 15times to produce elasticity.
5. Cover and into the fridge to chill for an hour. Then add some bacon bits and combine well.
6. Meanwhile boil a pot of water with some salt and blanch the baby asparagus and drain.
6. Divide the prawn mixture paste into 6 to 8 portions.
I did only 5 portions cos just nice for the amt of baby asparagus I have.
7. Wrap each portion with 4 to 5 baby asparagus. Spray some BBQ grilling oil or add place some pieces of french butter on the foil. Den place the asparagus prawn on it and into the oven to grill till the prawn paste turn pink. Done!;)
Tips : U can steam too if u prefer. Then there's no need to blanch the asparagus.
For steamer oven, steam for 5mins at 100degrees. For stove top, steam in a pot with boiling water for 5minutes. * depends on how thick ur prawn paste is.
Serve and garnish with a stalk of mitsuba leave or parsley leave on each roll. Enjoy!!!!
